Poori Saagu

Ingredients

Vegetables:green peas,beans,
carrot,cauliflower and potatoes 1 1/2 cups
Onion  large                               1
Turmeric                                     1/4 tsp
Jeera                                           1 tsp
Roasted channa                          2 tsps
Cinnamon stick                          1 inch
Star anise                                   1 petal
Cloves                                        2
Green chillies                             3
Fresh grated coconut                  3 tbs
Salt as per taste

Preparation

Boil all the vegetables with some salt and keep aside. They should be rightly cooked. Ensure the vegetables are cooked right, they should be neither crunchy nor become mushy.Grind all the masala ingredients, jeera cinnamon,anistar,cloves with fresh grated coconut and green chillies with the roasted channa dhal.Now the gravy is ready.Next take a deep bottomed pan add oil and saute the onions till they become transparent. Then add the gravy to the onions and let it cook for about 2-3 minutes adding the boiled vegetables,salt,turmeric and mix well and keep stirring for some more time.Temper it with mustard seeds and curry leaves.Use coriander leaves for garnishing.

To make Pooris

Wheat flour     2 cups
Salt, water and ghee

Mix the wheat flour with water,salt and little hot ghee and make a tight dough.Pull out a lemon sized dough and with the help of a rolling pin roll out circular shaped Pooris. Deep fry them in oil. Now soft and crunchy Pooris are ready. Enjoy it with yummy Saagu !!!
