Ingredients
Green Capsicums / Big Peppers 4
Potatos large 2
Onions large 1
Tomatoes 2
Green chillies 3 or 4
Grated cheese (mozzarella)
Salt as per taste
Preparation
Take a capsicum cut the top part and de-seed it. For the stuffing boil and mash the potatos and keep it aside. other ingredients needed - Very finely chopped onions and green chillies,peas and grated cheese. In a pan heat some oil and saute the onions,green chillie and the peas.Add the the mashed potato and
salt to this. Once cooled start filling the capsicums one by one till 3/4 th full .Smear oil dipped in salt or salted butter on every capsicum and top it with grated cheese and grill it ( alternatively heat it over a tawa) rotating regularly till the capsicum is cooked.
For the curry base
Fry the onions and tomatoes and grind into a fine mix. Soak red chillies for 1/2 hr before grinding it into a paste . Add oil to a heated pan and add the soaked red chilli paste , ginger garlic paste,salt, coriander powder , cumin powder with 1 pinch of turmeric. Cook the mixture until the raw smell disappears and the oil separates from the mixture. A little amount of water can be added while cooking to prevent the masala from burning (salt according to taste) . Add the tomato onion puree and cook on a low flame till the desired consistency. This will add spice and tangy taste to the stuffed capsicums.
Arrange the stuffed capsicum in a serving plate Spoon out some curry onto the capsicum while the rest go into the serving dish . If the capsicum is large , you can cut it into two before spooning the curry on top. Garnish with fresh coriander and the dish is ready to serve with steamed rice or bread.
(alternatively use chopped mushrooms/ minced quoran instead of potatoes)
