Khadi

It is a Main Dish made from curds meaning Kadi in Hindi.

Ingredients

Best suited Vegetables
Okra(lady's finger,Ash-gourd,
Brinjal(egg plant) Mangoes(optional)

 Curd                        2 cups
(churn it to form a thick butter milk)
Grated coconut        1/2 cup
Green chillies           5 or 6
Ginger                      1 inch
Fresh coriander        2 twigs
Thoovar dhal            2 tsps  
Jeera                         2 tsps
Coriander seeds        1 tsps
Turmeric                   1/2 tsp
Salt to taste
Oil for frying and seasoning
Mustard seeds         2 tsps
Fenugreek(methi)     1tsp

Preparation
 
Take the curds adding water churn it so that it forms a thick butter milk.Add salt and turmeric powder.
Soak the thoovar dhal (2tsps) grated coconut and coriander seeds for 20 mins.Meanwhile cut the vegetable and boil it. If it is (okra) lady's finger saute in oil and keep aside.Grind the grated coconut green chillies,ginger piece,jeera,soaked thoovar dhal, coriander seeds and fresh coriander to a fine paste and mix it with buttermilk and bring to boil on a slow flame.Using oil season this with mustard seeds fengreek and curry leaves.Now the Kadi is ready to be served.Instead of thoovar dhal and coriander seeds you can use besan powder and mix with the buttermlik.

Variation

Instead of the usual vegetable we can prepare Kadi with Mango fruit during mango season. This can be used as Raita also.Children like it because it is sweet.
