Khaman Dhokla

Ingredients:-

 2 Cups Besan flour
 I cup Curd [ Yoghurt]
 Turmeric
 Salt
Ginger paste
Green Chilli Paste
Lemon juice (1tsp)
Warm water
1 tsp of Eno fruit salt
For seasoning:-
Mustard seeds
Coriander leaves[finely chopped]
Grated coconut [preferably fresh]


Preparation:-

Mix the gram flour(besan) with the curds adding warm water ,lemon juice salt,ginger paste,green chilli paste,turmeric and make a smooth paste without any lumps.The consistency of the batter should not be very thick,it should be of "dropping'' consistency.

Preheat the Idly steamer  and allow the water to boil. During this time, mix eno fruit salt to the batter and whisk it for 20 seconds. Now, you will notice an effervescence from the batter and the volume will also increase. Pour it into greased trays and allow to steam for 15-20 minutes.

Then invert the tray and cut the cooked Dhoklas into square or diamond shape.Garnish this with finely chopped coriander leaves,grated coconut seasoning with mustard seeds.Now the Dhoklas are ready to eat.Try this and send your valuable suggestions.+
