This is a typical Karnataka Recipe made with Badanekai meaning Brinjal with curds/yougart
Ingredients
Brinjal large (or) 1
Medium sized 1/2 kg
Onion finely chopped 1 large
Ginger garlic paste 2 tsps
Finely chopped green chillies 4or 5
Oil
Salt as per taste
For tempering
Oil
Mustard seeds 1 tsp
Urad dhal 2 tsps
Red chillies 1 or 2
Preparation
Take 1/2 kg brinjals or 1 big fat brinjal and cut into big pieces and boil it in water and keep it aside. Take a pan heat enough oil and saute the finely chopped onions and the green chillies with ginger garlic paste and add the boiled and roughly mashed brinjals into the sauted onion ginger/garlic paste and keep stirring for a little while.Keep it covered and let it cool.Temper with mustard seeds,urad dhal 1 or 2 red chillies and curry leaves. Now add the yougart/curds and Mosaru Bajji is ready to serve.
Variation
With same ingredients instead of boiling the brinjals we can smear it with oil and grill it or keep on the gas oven.Keep turning continuosely till it gets burnt and peel the outer skin and mash the grilled brinjal and add it to the curds/yougart with salt and temper the same way with mustard seeds,red and green chillies,hing and curry leaves.Here we can omit onion and ginger/garlic paste.
