Kalkandu Bhath (Sugar Candy)

Ingredients

Raw rice                                1 cup
Kankandu/Sugar candy         1 cup
Cardamom powdered            4 or 5
Cashewnuts                           50 gms
Raisins                                   25 gms
Saffron                                   few strands

Preparation

Heat a pressure cooker and add 1 tbs of ghee and roast the raw rice and cook the raw rice by adding  1 cup extra water than usual so that it becomes mushy.Heat another kadai and add the sugar candy/ kalkandu adding water till it dissolves completely forming one string consistency i.e. till it sticks to your fingers.Now add the cooked rice and stir the mixture evenly to spread the sugar candy for some more time on a slow flame.Add the remaining  ghee slowly to the rice and the kalkandu mixture and keep stirring till the ghee leaves the sides of the pan. Finally add the fried cashewnuts,raisins and cardamom powder along with the saffron.
Kalkandu Bhath is ready to serve.
