Dosa Milagai (Idly) Podi

Ingredients

Urad dal        2 cups
Channa dal    1 cup
Red chillies    1cup
Oil                  4 tsps
White thill      50 gms
Hing               2 tsps
Salt to taste
 
Preparation

Take 1 tsp of oil in a  heavy pan and roast  the urad dal and channa dal SEPARATELY till they turn golden brown and crispy.Keep the flame on medium taking care not to over or under fry.The frying part is most important as it decides the quality of the powder.Then add 1/2 tsp oil fry the red chillies and hing in the same way.Dry fry the required amt of rock salt or table salt and also white thill and mix it with the fried dals,red chillies hing mixture. Cool the roasted ingredients and girnd them in a mixie to a coarse powder (medium coarse).Store them in air tight containers.Some like it very soft and powdery.
And now the Dosa Milagai Podi (Idly) podi is ready.
