Jilebi

Ingredients

Curds                     250 gms
Maida                    1 cup
Lemon juice           1 tsp
Oil (deep fry)
Sugar                      2 cups 
Saffron                   few strands
Kesar color             1/2 tsp

Preparation

Take curds in a bowl whisk it nicely.Then add Maida and little hot ghee mix it well to avoid lumps adding food color. Batter should be of thick consistency.Set it aside overnight for the batter to get fermented. Add sugar and water to make a sugar syrup of one thread consistency by adding few drops of lemon juice in the sugar as to avoid forming crystals.Add few strands of saffron.Take a pan heat oil.With the use of a Jiplog bag or any Piping bag or a thick cloth bag make a hole and pour the batter into the bag and start squeezing it out slowly into a randomly coiled circles  into the hot oil.Cook on a medium flame till golden yellow in colour. Remove from oil drain it and dip it in the warm sugar syrup for 2 or 3 minutes and keep it aside in another plate. Now the Jilebis are ready. Serve it hot.
