Ingredients
Brinjals green or purple 1/2 kg
Clean and chop into 1" thick slices
Mustard seeds 1 tsps
Urad dal 1 tsp
Channa dal 1 tCurry leaves 1 sprig
Salt to taste
Lemon juice 1/ tsp
Curry leaves 1 sprig
Coriander fresh for garnishing
Preparation
Heat oil in a pan and when it is hot add the mustard seeds,both the dals,curry leaves and turmeric powder.When the dals turn golden brown add the chopped brinjals and saute.Cover and cook the brinjals till they are soft.Add Vangi Bhath powder,salt and remove from fire.Add cooked rice,lemon juice and mix it with the brinjal mixture.Check the rice for salt and spice.If you want it more spicy can add more vangi bhath powder.Garnish with fresh coriander and serve with Raita.Now the Vangi Bhath
is ready to be served.
