Sabudana Vada (Sago vada)

Ingredients

Sabudana                   1 cup
Large potatoes           2
Large onion               1 finely chopped (optional)
Green chillies            5-6 finely chopped
Ginger grated             1"
Roasted peanut pdr     1/4 cup
Dry mango pdr           1/4 tsp
Corn flour                   1/2 tsp (for binding)
Cumin seeds               1 tsp
Salt to taste
Oil for deep fry

preparation

Wash sabudana and soak in water for 2-3 hrs.It will puff up and become translucent.Now drain out the water completely.Mix the sabudana with finely chopped green chillies grated ginger,peanut powder,
dry mango powder,cumin seeds, salt and mix it to form a semi thick dough.You can use corn flour which will help in binding the dough. Make lemon sized balls out of this dough flatten each one with your palm like a patties.Heat oil in a kadai and slide the rounds into the heated oil on medium flame.Fry the sabudana vada till crisp and golden brown in color.Drain the excess oil in kitchen paper towels. Now the sabudana vadas are ready. Serve it with green chutney.
