Thenkuzhal/ Thengolu

It is a very Popular snack item of Tamil Nadu

Ingredients

Rice flour                     1 cup
Urad dhal powder         2 tbsps
Cumin seeds                 2 tsp
Hing                              3 tsps
Butter                            2 tbs
Salt to taste
Oil for deep fry

Preparation

Dry fry the urad dhal in a pan cool it and grind it to a fine powder.Mix the rice flour ,urad dhal powder
cumin seeds,salt,butter and mix it in a vessel and knead it like a chappati dough.Heat oil in a heavy bottomed pan and when the oil is hot put a handful of the dough into the thenkuzhal press with a mould having 3 holes.Close the press squeeze out the dough to a big circle.Deep fry the thenkuzhal one by one in a low flame till it is crisp and turns golden brown in color.Take it out and place it on a oil strainer with a paper towel to remove excess oil and allow it to cool.Store in air tight containers.The Delicious Thenkuzhal is ready to serve.It goes well with Tea or Coffee.
