Uppu Cheedai

Ingredients

Rice flour                   2 cups
Urad dal flour            1/4 cup
Butter                         2 tbs
Jeera
   or
White thill                  2 tsps
Hing powder               1/2 tsp
Grated coconut           2 tbsp
Salt as per taste
Oil for deep frying

To prepare rice flour and urad dal flour

The rice flour and urad dal flour for uppu cheedai,vella cheedai and thattai are the same.You can prepare the flour in one shot.Wash and soak the rice for 1/2 hr. Drain well and spread on a white cloth or a paper towel.After 15 mins grind it in a mixie.Sift throgh a coarse sieve so that there are no lumps.Fry the rice flour till tou get a nice aroma.Take a pan and dry fry the urad dal in the same way until it is light brown.Grind it in the mixie properly and again sieve it.Now you will get urad dal flour.

Preparation

Mix rice flour with the urad dal flour. Add butter,asafoetida,jeera or white thill seeds and salt to taste.Add water and make a thick dough.Mix all the ingredients except oil and make a soft dough. Using a greased palm roll a small portion of the dough into marble sized balls and leave them to dry on a white cloth or a kitchen tissue.After you finish with all the dough heat oil in a deep kadai and start frying the Cheedais handful at a time.Lots of bubbles will appear in the beginning.Slowly stir it around to prevent sticking to one another.Fry the cheedais until they turn golden brown.Keep the flame in medium throughout and stir in between for even cooking.Once the frying sound subsides totally,lower the flame drain the Cheedai well and remove on a kitchen tissue.Store in air tight containers.

Variation


In place of the soaked and powdered rice flour you could prepare Uppu Cheedai with the rice flour you get in any grocery shop or any super market.
