Sambar

Ingredients

Vegetable of your choice like green beans,lady's finger,brinjal,ash-gourd,onion etc

Thoovar dhal                1 cup
Tamarind                      1 lime size
Sambar powder             3 tsp (recipe given)
Turmeric powder          1/2 tsp
Oil for seasoning           2 tsp
Mustard seeds               1 tsp
Fenugreek seeds            1/2 tsp (optional)
Hing                               1 pinch
Curry leaves                  1 sprig

Preparation

Wash and clean the dhal and add 2 cups of water and cook it in a pressure cooker.Mash the dhal coarsely and add some water if needed.Soak the tamarind in water and squeeze out the pulp upto 1 cup.Now take a pan and pour some oil and saute the sambar onions till they turn tender.Add the tamarind extract along with the sambar powder,sauted onions,salt.turmeric powder and let it boil till they are cooked.Add the mashed dhal to this mixture.Allow it to boil for 5 mins and remove from heat.With 2 tsps of oil season the sambar with mustard leaves,fenugreek seeds(optional) hing and curry leaves.
