Vatha (vatra) Kuzambu is a favourite Food Item in most of South Indian Homes.
Ingredients
Dry vathal like sundakai,manathakalikai,dry mango
Tamarind 1 lemon size
Sambar powder 4 tsps
Sesame oil 2 tbs
Mustard seeds 2 tsps
Methi seeds 1/2 tsps
Red chillies 2-3
Hing 1/4 tsps
Urad dal 2 tsps
Curry leaves few
Salt to taste
Preparation
Soak the tamarind and extract the juice upto 2 - 21/2 cups by adding water.Heat 2 tbs of sesame oil fry the mustard seeds,urad dal,red chillies,methi seeds hing and curry leaves.Let it crackle and then add the vathal of your choice and saute for some more time.Now add the tamarind juice,sambar powder,salt, turmeric and cook it on a low flame till the tamarind mixture thickens.Keep stirring till the mixture leaves the sides of the kadai oozing out oil.This is the right consistency of the Vatha Kuzambu.Try this with sutta appalam or dry pappad. It will be awesome !!!!
