Gojju (Karnataka)

It is usually prepared with Bitter Gourd.Gojju can also be made using eggplant (brinjals) pumpkin,several types of gourds,onions,lady's finger and capsicums.

Ingredients

Any one of the veg of your choice 1/4 kg
Ingredients for the gojju powder
Urad dal             2 tsp
Methi seeds        1 tsp
Red chillies        8-10 
Raw rice             2 tsps
White thil           3 tsps
Hing                    1/2 tsp
Copra                  2 tbs
Curry leaves        few

Ingredients for making Gojju

Tamarind             1 lemon size
Jaggery                1 marble size
Turmeric              1/2 tsp

For the seasoning
Greeen chillies     2

Mustard seeds      1 tsp
Urad dal               2 tsps
Hing and curry leaves
Salt to taste
Preparation

Take a pan and heat oil and fry the masala ingredients for the gojju.Keep aside.Meanwhile soak the tamarind and squezze out the juice completely.Make it to 3 cups.In a kadai add oil fry mustard seeds,urad dal,green chillies and curry leaves. Saute the (veg) brinjal or onion for 2- 3 mins, add the tamarind juice along with turmeric powder and required amt of salt and let it boil on a low flame till the raw smell of the tamarind goes and starts thickening.Add the fried and ground masala (gojju) powder and the jaggery. Stir well and keep it closed with lid and it to boil on a medium flame till the oil floats on top and when thethe gojju becomes thick.After all this is done you will get a nice aroma.Now the Gojju is done and ready to serve.

 Variation

This can be made with Pineapple with the same masala.Here you can reduce the  amt of red chillies.
