Carrot Halwa



Ingredients

Grated carrots  1/2 kg
Whole milk      1/4 litre
Sugar                350gms
Ghee                 2tb
Cardamom       1 tps powdered
Saffron             few strands (optional)
Cashewnuts,almonds and raisins for garnishing

Preparation

Saute the grated carrots in 1 tbs of ghee till the raw smell goes.Then boil the carrots in 1/4 litre of whole milk till it is cooked on a slow flame.Then add the sugar and mix well till the sugar has dissolved and all the milk is absorbed.Keep stirring for some more time till it leaves the sides of the pan.Add the powdered cardamom and saffron.Can add little amount of ghee.After it is done remove from pan arrange in a serving dish garnishing it with cashewnuts,almonds and raisins.Serve hot or cold.
