Kesari Bahth

Ingredients

Rawa/Semolina     1 cup
Sugar                     1 cup
Water                     1cup
Milk                       2 cups
Ghee                       3 tbs
Cashewnuts           50 gms
Raisins                   50gms
Cardamom powder 1 tsp            
Kesar color            1/2 tsp
Saffron                   few strands




Preparation

Heat a heavy pan and roast the rawa/semolina in 1 tbs of ghee till you get the nice aroma.Keep it aside.In the same pan heat 3 cups of water and milk and bring it to boil.Add kesar color and few strands of Saffron and cardamom powder into this and add the fried rawa and cook in slow flame..Add the the sugar into the cooked rawa little by little stirring continuously to avoid forming lumps.Then keep adding the ghee slowly till it is required. Do not pour excess ghee since it may ooze.Keep
stirring this mixtureof rawa and sugar till it is cooked. the Kesari Bhath is ready to serve.Garnish it with fried cashewnuts and raisins.

Variation
Slices of pineapple can be added to the bhath while cooking this mixture.This gives a nice fruity taste.
