Vegetable Pulav

Ingredients

Basmati rice     2cups
Onion large       1
Carrots cut into cubes,fresh peas,beans,
Cauilflower florets,double beans all together   300 gms
Cashewnuts      50 gms
Salt to taste
Green chillies       3
Cinnamon sticks   3
Cardamom            3
Cloves                   3
1/4 cup mint leaves

Preparation


Soak the Basmati rice for 1/2 an hour and drain and keep aside.
Heat 1 tbs of ghee and saute onions ,masala ingredients namely cardamom, cinnamon and cloves. Add some more oil and saute green chillies, mint and the ginger for 10 mins till it becomes soft.Now  drain the Basmati rice and add the vegetables adding the salt to your personal taste and cook on a slow flame adding 4 cups ofwater.Stir well.Cover well till the rice and the vegetables and masala are cooked and add the Bay leaf which will enhance the flavour.Now the Vegetable Pulav is ready.Just before you  serve add the fried Cashewnuts and mix well.
Serve the Vegetable Pulav hot with Raita.
