Pal Kozukattai

It is a South Indian Dessert

Ingredtents

Rice flour                            1 cup
Coconut milk(canned)         2 cups
(milk taken from fresh coconut)
Sugar                                    1/2 cup
Salt                                       1 pinch
Ghee                                     1 tsp
Milk                                      1/2 cup
Cardamom powder                 tsp

Preparation

Heat 1/2 cup of milk 1 1/2 cups of water to the rice flour,ghee and a pinch of salt together.Cook the batter in a pan (preferably non-stick pan) and keep stirring without forming lumps.Now it will get a dough consistency.Remove and cool it.Add 4 tsps oil and knesd it to a soft dough.Make marble size small balls out this dough and keep aside.Grind and take fresh milk from a medium sized coconut or you can buy ready made canned coconut milk.Make it three parts adding water to the them and get thin semi thick and thick and creamy coconut milk.In a non-stick pan put in the 3rd milk or the thin extract of the coconut milk and add the cooked rice balls.When it boils the rice flour balls will start floating.Now add the 2nd mlik extract and repeat this way for the 1st or the thick and creamy milk and sugar.Cook on a slow flame till the milk and the balls get to a thick consistency.Add the cardamom powder.Serve hot or cold.Pal Kozukattai is ready to serve.
