Phirni

Popular creamy rice based North Indian Dessert.

Ingredients

Rice                                 3 tbs
Whole milk                     1 ltr
Saffron                            few strands
Sugar                               1 cup
Cardamom powder          1/2 tsp
Pistachios                         10-15
(blanched,peeled, and sliced)

Preparation

Wash and soak rice for 1/2 hour. Grind rice to a medium coarse paste.Keep it aside.Pour the milk in a vessel or a pan and bring it to boil.Cook on a medium flame and then let it simmer.Slowly pour in the rice paste stirring on contiuousely to avoid forming lumps till the mixture is thick.Add sugar and keep stirring till the sugar dissloves. Mix well with the cardamom powder and the saffron.Keep stirring till it forms a creamy consistency.Take off from fire and cool it to room temperature.Pour it into individual glass bowls or small earthern pots.Garnish with pisatchios and almonds.Refrigerate to set for 1-2 hrs.Now the Phirni is ready.
