Rasam Podi / Sarina Pudi

Ingredients

Coriander seeds        2 cups
Red chillies               1 cup
Jeera                          1/2 cup
Pepper                        1/4 cup
Thoovar dal                2 tbs
Mustard seeds            2 tsps
Hing                           1 tsp
Methi seeds                1 tsp
Curry leaves               10 sprigs
Oil
Ghee

Preparation

Take a heavy pan add 1 tsp of oil and roast the coriander seeds till you get the aroma.Fry all the ingredients SEPARATELY.In the same pan with very minimum oil fry the red chillies and remove the stalks.Dry fry the jeera,mustard seeds,  thoovar dal and the curry leaves.Add 2 drops of oil and fry the methi till it is golden brown.Fry the pepper in 1/2 tsp of ghee till it becomes crispy.Cool the roasted ingredients.Put  them in a mixie and grind them to a medium coarse powder.Store them in air tight containers.
