Rawa Papad Kheer (Appi Payasa/payasam)

It is an Authentic Dessert which is very popular in Karnataka.This is prepared during Festivals like Diwali and important functions like Weddings and Family Functions.

Ingredients

Semolina(Rawa)         1 cup
Ghee                            3 tsp
Maida                          1/2 cup

Milk                            1 litre
1 pinch salt           
Sugar                           2 cups
Cardamom powder      1/2tsp
Nutmeg powder           1/4 tsp
Saffron                         few strands
Cashews and raisins     50 gms each
Oil for deep frying

Preparation

 Mix the rawa, ghee.and a pinch of salt with little water and make a thick dough..Keep it covered for 15-20 mins.Then make small lemon sized balls from the dough and dust it with maida and roll out small  papads resembling Poori. At the same time on each rolled out papad prick it with a fork so that it does not pop out like poori. Make thin papads with the remaining dough. Heat oil in a pan start frying the papads one by one till it turns golden yellow in color.After all the papads are fried let it cool for sometime.Boil the whole milk with the sugar,cardamom,nutmeg powders and few strands of saffron.When the sugar gets completely dissolved put off the flame.Crush the fried papads into small size pieces with your hands and add it to the  milk. Cover and keep it aside.Do not stir  too much since the rawa papads  becomes soggy.Keep it covered for 5- 10 mins. Add fried cashews and raisins to the Kheer.Now the the Rawa Pappad Payasam is ready to serve.It can be served hot or cold.If refrigerated it will be Yummy !!!

  1. This is one of the best among payasams. The famous caterers Jaya Raghavendra Caterers (Chromepet) prepared this for the Muhurtam lunch in my daughter Brinda's wedding and a friend of mine whenever he sees me, "Oh! what a wonderful payasam was served. I will never forget it."
